Air, water or remote cooled?
Air-cooled is the default — cheapest to buy and run, but it dumps heat into the room and needs 6"+ of clearance. Water-cooled holds production in hot, tight spaces (and is sometimes code-required), at the cost of water usage. Remote condensing moves the compressor to the roof: a quiet dining room and full production on the hottest line, for more install cost. If your kitchen runs above 80°F, don't size an air-cooled machine off its catalog number — that rating is at 70°F air / 50°F water.
Keep it making ice
Manitowoc calls for cleaning and sanitizing every 6 months minimum — more often with hard water. Scale is the #1 killer of evaporators, and it's the failure your warranty inspector looks for first.
