NEO vs. Indigo NXT vs. CrystalCraft — which series?

NEO® is the undercounter line — 57 to 315 lb/day with a built-in bin, made for bars and cafés where the machine lives under the back bar. If you're replacing a unit that slides under a counter, you're shopping NEO.

Indigo NXT™ is the modular line: an ice machine head (305–1,900+ lb/day) that sits on a separate storage bin or dispenser. It's the workhorse spec for restaurants, hotels and high-volume kitchens — pick the head for production, the bin for buffer.

CrystalCraft Premium™ makes slow-melting, extra-large gourmet cubes for cocktail programs. Lower volume, premium presentation.

Sizing rule of thumb

Take your busiest day, not your average. We figure roughly 1.5 lb of ice per seat for restaurants and 3 lb per seat for bars — then size the machine at 20% over, because production drops as ambient temperature climbs.

VenueRule of thumb100-seat example
Restaurant1.5 lb / seat / day≈ 180 lb/day → 200+ lb machine
Bar3 lb / seat / day≈ 360 lb/day → 450+ lb machine
Hotel5 lb / room / day100 rooms ≈ 500 lb/day + dispensers
Healthcare10 lb / bed / dayNugget ice, dispenser-fed

Air, water or remote cooled?

Air-cooled is the default — cheapest to buy and run, but it dumps heat into the room and needs 6"+ of clearance. Water-cooled holds production in hot, tight spaces (and is sometimes code-required), at the cost of water usage. Remote condensing moves the compressor to the roof: a quiet dining room and full production on the hottest line, for more install cost. If your kitchen runs above 80°F, don't size an air-cooled machine off its catalog number — that rating is at 70°F air / 50°F water.

Keep it making ice

Manitowoc calls for cleaning and sanitizing every 6 months minimum — more often with hard water. Scale is the #1 killer of evaporators, and it's the failure your warranty inspector looks for first. Put a Manitowoc water filter in front of every machine and change cartridges on schedule; it pays for itself in the first avoided service call. We stock the full filter & accessories line next-day.
