Weyermann® Roasted Barley is the essential specialty grain for producing authentic Dry Irish Stouts, Porters, and Black IPAs. Unlike malted roasted grains, roasted barley is produced from un-malted grain, resulting in a drier, sharper roasted character with intense notes of dark chocolate, espresso, and roasted coffee. Kilned to approximately 400-500° Lovibond, it provides a deep ebony color and a characteristic white-to-tan head. Essential for adding complex bitterness and aromatic depth to your dark ales.

Brewery Mash Tip: Roasted barley should be used at 3-10% of the total grist. Because it is un-malted, it provides significant color and flavor without contributing to the fermentable sugar load. To prevents harsh, acrid flavors, consider adding the roasted barley at the end of the mash or during the vorlauf. It pairs exceptionally well with East Kent Golding hops and English ale yeast.
