Weyermann® Carafa® Special Type 1 is the gold standard for producing dark beers with a smooth, clean finish. Unlike standard roasted malts, this variety is dehusked before roasting, which removes the bitter, astringent tannins found in the grain's outer shell. Kilned to approximately 340° Lovibond, it provides a deep coffee-black color and subtle notes of espresso and dark chocolate without the "burnt" aftertaste. It is the essential grain for Schwarzbiers, Cascadian Dark Ales, and smooth Porters.

Brewery Mash Tip: Use Carafa® Special Type 1 at 1-5% of the grist for color adjustment or up to 10% for a robust dark profile. Because it is dehusked, it provides a significantly softer mouthfeel than traditional roasted barley. It can be added to the main mash or sprinkled on top of the grain bed during vorlauf to extract color with minimal flavor impact.
