SafBrew™ T-58 is a specialty yeast strain selected for its complex ester profile and unique peppery/spicy notes. This 11.5g sachet is ideal for 5-6 gallon batches. T-58 is particularly well-suited for brewing authentic Belgian Wheat beers, Saisons, and Strong Ales. It offers excellent sedimentation and high attenuation, producing a dry finish that highlights the characteristic "funk" and spicy aromatics of traditional Continental styles. A versatile choice for brewers looking for a robust, high-performance Belgian strain.
Brewery Tip: To maximize the spicy/phenolic character, ferment at the higher end of the temperature range (approx. 72-75°F). For a cleaner, more fruit-forward profile, ferment cooler at 64-68°F. Rehydrating in 10x its weight of sterile water at 80°F for 15 minutes ensures the highest viable cell count for a vigorous start. This strain is also excellent for bottle conditioning.
