Lalvin ICV-D47 is a specialty wine yeast strain isolated from the Côtes-du-Rhône region, prized for its ability to produce complex, full-bodied white wines with enhanced mouthfeel. It is the gold standard for Chardonnay and other varietals aged on the lees, contributing notes of tropical fruit, citrus, and a subtle "nutty" character. This 5g sachet is formulated for consistent results in 5-6 gallon batches, providing excellent fermentation kinetics and a clean, aromatic profile.
Wine Maker's Tip: D47 thrives at temperatures between 59°F and 68°F. Fermenting at the cooler end of the range preserves the delicate floral and citrus aromatics, while slightly warmer temperatures enhance the spicy and tropical notes. To maximize the "creamy" mouthfeel, perform periodic batonnage (lees stirring) after fermentation is complete.
