The Thunder Group STPA3002 is a heavy-duty full-size steam table pan in 24 gauge 18/8 (304) stainless steel with anti-jam corner ribs. The combination of true 24-gauge thickness and 304 stainless puts this in the premium tier of steam-table pans - meaningfully more durable than the more common 25-gauge 18/0 pans, and worth the upcharge in operations that cycle pans through dishwashers hundreds of times per year.

Why 24 Gauge vs. 25 Gauge

24 gauge is roughly 25% thicker than 25 gauge - the difference between a pan that lasts 2 years in heavy use and a pan that lasts 5+. For low-volume operations the cost premium is hard to justify. For commissaries, banquet halls, and catering operations that cycle pans constantly, 24-gauge pays back fast in reduced replacement cost.

Anti-Jam Design

The corner ribs interrupt the smooth interior wall just enough that nested pans cannot vacuum-seal against each other. Standard pans without anti-jam features develop a vacuum lock when stacked wet, requiring real force (and occasionally a screwdriver) to separate. Anti-jam pans separate with a single hand pull, the right format for fast-paced banquet and catering work.

304 vs. 18/0 Stainless

18/8 (304) stainless contains 8% nickel, which dramatically improves corrosion resistance vs. 18/0 (nickel-free) pans. 304 pans hold up to repeated dishwasher caustic cycles, acidic foods, and aggressive sanitizers without staining or pitting. For long-life use, 304 is the right call.
