I used to tape the temp controller sensor to the side of the fermenter. This would then control the operation of the refrigerator through the inkbird controller. That setup worked - but I had to overcompensate on temperature based on the pitching temp and yeast activity - otherwise the temperature rise of the actual liquid would be too high (as measured with a floating tilt hydrometer).

This thermowell is great because all it needs is a 1/2" hole in the lid to mount the Duotight bulkhead, and the stainless thermowell slips right inside. There are o-rings in the bulkhead - both for the bulkhead and inside of the duotight fitting - maintaining a gas tight container. Getting the stainless rod through the duotight fitting and o-rings requires a little bit of lube (keg lube, vaseline, etc.) Minimalist and effective. Slip the inkbird temp sensor down the stainless pipe for perfect interior temperature monitoring. It's also nice and long for larger vessels.
