SafBrew LA-01 - Low & Non-Alcoholic Beer Yeast
SafBrew LA-01 is a specially selected strain of Saccharomyces cerevisiae var. chevalieri, designed for the production of low and non-alcoholic beverages (<0.5% ABV). Unlike typical brewing yeasts, it does not assimilate maltose or maltotriose but efficiently ferments simple sugars like glucose, fructose, and sucrose. Known for its subtle aroma profile and medium sedimentation, this yeast forms a fine, powdery haze when resuspended, ensuring clarity and control over the final product.
🌡️ Dosage & Fermentation Temperature:
- Dosage: 50 to 80 g/hl
- Ideal Temperature Range: 10–25°C (50–77°F)
⚠️ Important Considerations:
- As residual fermentable sugars will remain post-fermentation, it is mandatory to pasteurize the beer after packaging (80 to 120 PU) to prevent refermentation.
- Not suitable for cropping and repitching.
📋 Usage Instructions:
1. Direct Pitching:
- How: Sprinkle the yeast directly onto the wort surface at or above fermentation temperature. Ensure even coverage to prevent clumping.
- Tip: For best results, add yeast during the first part of the vessel filling process, allowing hydration at higher temperatures before cooling to fermentation temperature.
2. With Prior Rehydration:
- How: Sprinkle the yeast in a minimum of 10 times its weight of sterile water or boiled and hopped wort at 25–29°C (77–84°F).
- Rest: Let sit for 15–30 minutes, stir gently, then pitch into the fermentation vessel.
🛑 Storage Guidelines:
- Short-term (<6 months): Store below 24°C (75°F).
- Long-term (>6 months): Store below 15°C (59°F).
- After Opening: Seal tightly and store at 4°C (39°F). Use within 7 days.
- Note: Avoid using soft or damaged sachets.
