Dingemans Special B Malt is a world-class Belgian specialty grain, world-renowned for its unique "Special B" roasting process. Kilned to approximately 115-150° Lovibond, it imparts a beautiful deep garnet-to-brown color and intense, complex notes of raisins, dried plums, and dark caramel. It is the definitive malt for producing authentic Belgian Dubbels, Quads, and Christmas Ales, providing a heavy body and a powerful malty sweetness that defines the style. Its lack of astringency makes it superior to standard roasted barleys for these sweet, dark styles.

Brewery Mash Tip: Special B should be used at 5-15% of the total grist. Because it is highly roasted, it does not require mashing for sugar conversion (it can be steeped), but including it in the main mash ensures the best integration of the complex dark fruit aromatics. It pairs perfectly with Belgian Pilsner base malt and Candi Syrup to create a traditional Abbey-style profile.
