Dingemans Biscuit Malt is the definitive Belgian specialty grain for imparting a distinct "oven-toasted" aroma and a warm bread-crust flavor to the beer. Kilned to approximately 18-25° Lovibond, it provides a beautiful golden-to-copper color and a clean, dry finish with no residual sweetness. It is the essential grain for traditional Belgian Blondes, Abbey Ales, and Nut Brown Ales, providing a sophisticated malt complexity that perfectly balances the spicy esters of Belgian yeast strains.
Brewery Mash Tip: Biscuit malt should be used at 5-15% of the total grist. Because it is highly toasted, it does not have the enzymatic power to convert itself; it must be mashed with a high-enzyme base malt (like Pilsner or Pale Ale malt).
