Amylase Enzyme Formula is a high-potency additive used to ensure complete starch conversion in the mash. This 1 lb bulk bag is ideal for professional breweries and homebrewers working with high percentages of adjuncts like corn, rice, or flaked grains. Alpha-amylase specifically breaks down large, complex starch molecules into smaller dextrins, reducing mash viscosity and improving extract efficiency. It is also a critical tool for producing "brut" style beers where a very low final gravity and a bone-dry finish are desired.
Brewery Usage Tip: Add amylase enzyme directly to the mash at a rate of 1 teaspoon per 5 gallons. It is most active at temperatures between 150°F and 158°F. If you are brewing a high-adjunct lager or a very high-gravity stout, adding amylase can help prevent a "stuck" fermentation by ensuring the yeast has the maximum amount of fermentable sugars available. Store in a cool, dry place to maintain enzymatic activity.
