Why a Tear-Drop Head
The tear-drop shape moves more product per stroke than a balloon whisk and creates a tighter shear at the bottom of the pot, where emulsions form. Standard balloon whisks are great for incorporating air; tear-drops are the right tool for forcing oil into water (emulsion building) and for blending heavy mixtures.
40 Inch Length
40 inches is the right length for deep stock pots and the large-bowl mixing vessels used in commissaries and banquet kitchens.
