A 19-inch square stainless steel donut screen, the workhorse rack for production donut shops and bakery operations. Holds a full batch of cake or yeast-raised donuts during proofing, transfers them as a unit into the fryer, lets oil drain back through the mesh during the fry, and lifts the finished batch out clean. Stainless construction handles thousands of fry cycles without rust, corrosion, or flavor transfer.
Bakery Tip: Match the screen size to your fryer's inside dimensions with at least 1" of clearance on all sides. Too tight and the screen will hang on the fryer rim and skew the rack. After each shift, scrape carbon buildup with a non-metallic scraper and run the screens through your bakery's standard CIP cycle; carbonized oil left on the mesh oxidizes through the next day's batch and dulls the donuts' color. Replace screens when more than 5% of the mesh shows tears or stretched cells.
