The Thunder Group ALSP1826 is the standard 18 x 26 inch full-size sheet pan in 19 gauge aluminum, the workhorse bakery and oven pan in every commercial kitchen in America. 19 gauge sits between 18 (heavier, premium) and 20 (lighter, budget) - solid enough to resist warping in repeated 450-500 F bakes, light enough to handle one-handed during pan rotation.
Why Aluminum Over Steel
Aluminum heats faster, cools faster, and weighs less than steel sheet pans. For bakery work (cookies, breads, pastries) where even browning matters, aluminum's thermal conductivity is dramatically better than steel - that's why every commercial bakery defaults to aluminum sheet pans. Steel pans are appropriate when you need acid-resistance (tomato roasting) or extreme durability (commissary high-abuse use).
Sizing
Full-size sheet pans (18 x 26 inches) fit standard full-size oven racks at one pan per shelf. For smaller batches or counter-top ovens, see the half-sheet (13 x 18) and quarter-sheet (9 x 13) sizes. Full pans hold roughly 36 cookies, 4 sheet-pan dinners, or a single batch of 1/4-sheet-portioned cake.
Care
Hand-wash recommended to preserve the pan surface. Avoid scouring pads on the bake-side - micro-scratches over time become flavor channels for old grease. Many commercial bakeries season their aluminum sheet pans with a thin layer of cooking spray and bake briefly to build a low-stick surface.
